Catfish Nuggets
- [ ] 2lbs catfish nuggets
- [ ] Fish fry or cornmeal
- [ ] Flour
- [ ] Neutral oil
- [ ] Seasonings (Salt, pepper, garlic powder, paprika, lemon pepper)
- [ ] Hot sauce
- [ ] 2 eggs beaten
- [ ] Mustard

OPTIONAL: soak fish in milk to reduce fishy taste and any odor

* Pat fresh catfish nuggets with paper towel to absorb water/liquid
* Coat fish with mustard
* Season fish to your liking. Salt, pepper, garlic powder, paprika works fine
* Place nuggets in the bowl of dry coating ingredients
* Dust off excess coating
* Add oil to your frying pan or Dutch oven
* Heat oil over medium heat -- test oil readiness by adding a dash of flour to see if oil sizzles
* Place fish in oil and cook 2-3 minutes per side
* Cook until the fish coating is golden brown in color -- Do not over crowd the pan
* Remove from oil and drain on a paper towel on a plate
* Allow the oil to reheat but watch for oil burn off
* Turn the fire lower between batches
* Serve with your favorite sides
