Cinnamon Roasted Almonds
1/3 cup butter
1 cup sugar
2 egg whites
Up to 2 tsp salt
4 tsp cinnamon
16 oz whole almonds
Pre heat oven
Melt butter in the microwave
Beat egg whites with an electric mixer with salt until frothy.
Gradually add sugar and beat until the mixtures has stiff peaks.
Add cinnamon and blend well.
Fold in almonds.
Pour in butter and stir
Pour onto foil lined cookie sheet spread so the bits are in a single layer.
Bake for 10 mins. Take out stir and spread out again. Return to the oven repeat bake every 10 mins for a total of 40 mins.
