This plant is a glaucous dog rose ( Rosa dumalis ) and is one of the edible rose species with the most vitamin C content in its fruits : about 943mg of vitamin C in 100g.
The adult human body being able to absorb maximum 200mg of vitamin C, and the average hip flesh weighing 1-2g (0.03-0.7 oz) about 10 hips will be enough to fulfill an adult daily vitamin C requirement.
To preserve the vitamin C, the hips must be soaked in hot water after being crushed as soon as possible.
Its hips are edible raw up to 25g or cooked up to 50g but not worth eating imo because its seeds are indigestible and its inside hairs can cause severe irritations of the throat and choking so you have to slip open the hips discard the seeds and hair and put through running water.
The preparation required to make it edible is tedious, so better make tea instead.
By soaking the hip purée in hot water as soon as possible, it stops the vitamin C-destroying enzymes that have been freed by the crushing.
