Description
The takikomi gohan is a Japanese mixed rice dish, cooked in an umami filled dashi broth filled with mushrooms!
[Dashi Broth Ingredients]
500ml water
10g dashi kombu
Handful of bonito flakes
[Ingredients]
2 cups / 300g rice
Shiitake, maitake, enoki, shimeji mushrooms
300ml dashi broth
3 tbsp soy sauce
2 tbsp mirin
1. Wash the rice until water is clear, soak in water for at least 15 minutes.
2. Make dashi kombu by bringing water with dashi kombu just before boiling, then lower heat & simmer for 10 minutes.
3. Take out kombu, heat until just boiling again then turn heat off. Put in handful of bonito flakes, leave it for 5 minutes, then filter it out.
4. Put the rice into the rice cooker, along with dashi broth, soy sauce, mirin.
5. Slice up mushrooms & sauté in medium high heat in the following order: shiitake, shimeji, maitake, enoki.
6. Put into rice cooker, turn it on to you desired hardness settings.
7. Mix it up once finished, put into bowl. Enjoy!
