This Amarena Cherries and Custard Tart is by far my favorite dessert. Always delicious, even after 2 days. And it's perfect for summer!

Quiche with sour cherries is an exquisite dessert typical of the Campania region, also known as Amalfi Tarte. It is made on the basis of a lemon-flavored shortcrust pastry filled with custard and cherries in syrup. Everything is decorated with powdered sugar. Heavenly dessert! I'm sure you'll fall in love with it too, as I did (and like most Italians!)

Like all traditional recipes, even Amalfi Tart is prepared differently by every family. My version uses a shortcrust pastry recipe and a custard recipe from an Italian pastry chef. Amarena cherries, on the other hand, are with syrup, which I really love!

Follow my advice and you can't go wrong, you'll make a dessert that will drive your guests crazy! There are only 2 precautions:

1 - Drain the syrup well from the cherries.
2 - Let the cake rest and enjoy it cold.

How to make Amarena and Custard Tart:

🛒 Ingredients for a cake mold with a diameter of 22 cm:
For shortcrust pastry
► Butter at room temperature, 200 g
► Powdered sugar, 75 g
► Honey, 40 g
► Egg yolk, 1
► Salt, 2 g
► Water, 4 g
► Zest of 1/2 lemon
► Flour 00 or all-purpose flour, 300 g
For custard
► Whole cow milk, 400 ml
► Zest of 1/2 lemon
► Egg yolks, 6
► Sugar, 120 g
► Corn starch, 30 g
► All-purpose flour or Flour 00, 20 g
For Amalfi Tart
► Amarena Cherries in syrup, 160 g
► Powdered sugar

🗒 Preparation

For the shortcrust pastry:
Stir the ingredients quickly until a homogeneous mixture is formed. Cover with plastic wrap and refrigerate for at least 2 hours.

For custard:
Prepare the custard following the instructions in this video tutorial https://youtu.be/60Fvp6Mep4A but using the ingredients mentioned in this recipe.

For Amalfi Tart:
Roll out the dough into a mold, leaving edges about 3 cm high. Fill with cherries and pastry cream. Decorate with dough strips and bake in a preheated oven at 175 °C for 35–45 minutes, until golden.

Let cool completely before removing from the mold and dusting with powdered sugar.
