..we made a Pistachio Lava Cake in 2 Minutes!? 🍰💥 (No Oven!)

...so let's just say that figuring our how to make this Pistachio Lava Cake (Easy Microwave Mug Cake) was not so simply haha. But it was good if you don't mind wet cakes. And super super fast to make.

Recipe IB (Chef Josh Gale)

✨ Ingredients (1 serving):

-1/2 cup Greek yogurt
-1/4 cup shelled pistachios
-2 tbsp maple syrup or honey (we went with maple syrup)
-1 egg
-1 tsp vanilla extract
-1 tsp baking powder
- white chocolate (optional)
- matcha powder (optional, we used in our 3rd cake! 😆)

🌀 Instructions:

-Blend all ingredients until smooth.
-Pour into a greased, microwave-safe ramekin or mug — fill only 2/3 full.
-Microwave on high for 30 seconds.
-Microwave again for another 30 seconds, then check the edges. If they’re still soft, continue microwaving in 15-second intervals until firm (microwave power may vary). IT TOOK US 3 TRIES/CAKES TO FIGURE THIS OUT 😂
